The challenge
A production kitchen behind a retail counter
A bakery looks simple from the customer’s side of the counter, but behind it sits a working production kitchen, with the ovens, ventilation, and health code requirements of any commercial food operation, all fit into 1,241 square feet alongside the customer-facing space. For a small business, the plan set has to be right the first time, because review cycles run on the county’s clock while the lease runs on the owner’s.
